What I really love about this breakfast parfait is the nutty, crunchy, warmth of the almonds, blended with rich creamy yogurt and fresh, sweet fruit.
If you want to eliminate or reduce sugar, spreadable fruit is the way to go! It is intensely yummy and can be just as sweet as conventional fruit jam (but without the added sugar.) Spreadable fruit typically contains concentrated sweet fruit juices to achieve this.
Quick Tip: St. Dalfour is a 100% fruit spread available in grocery stores and is perfect in this parfait. It’s an old French recipe sweetened only with fruit juice concentrate. I also make pure fruit spreads (with no added sugar), but this one is great if you’re short on time. It’s also delicious and healthy. And it’s French! This is a parfait, after all.
1/2 cup rolled oats
1 tablespoon sliced almonds
1 teaspoon cinnamon
1/2 cup Greek yogurt
1 tablespoon blueberry jam
1/4 cup fresh fruit
- Combine oats, nuts, and cinnamon in a saucepan. Stir continuously over medium-high heat with a wooden spoon, until oats become golden and lightly toasted. Remove from heat.
- Add the oat-almond-cinnamon mixture to the serving container. Glass is nice because you can show off all the multi-colored layers! Note on the order: The ideal order depends on personal preference and how soon you plan to consume it. If you want the oats as crisp as possible, add the oats last. If serving immediately, the oats will still remain crunchy with rich yogurt - even if they are on the bottom layer.
- Add remaining layers of yogurt and jam.
- Stir lightly. Top with fresh fruit and sliced almonds.
