The kale is almost a bit part player in this salad. All the other ingredients give it a lovely Mediterranean feel, from the sun-dried tomatoes to the olives. The sunflower seeds give it a nice crunch, and protein. Substitute the seeds for nuts. Pecans, walnuts, and cashews are all good options.
What types of kale are best? Curly, Tuscan (aka Lacinato or Dinosaur), Red, or Baby are all excellent. Remove the inner stem and slice into thin strips. The main trick is to slice the kale into thin strips.
I love this salad with a classic and zesty oil and vinegar dressing. Caesar dressing is also a great match.
4 cups kale, diced
1/2 cup cucumber, diced
1/4 cup sun-dried tomatoes
1/4 cup Kalamata olives
1/4 onion, sliced in rings
1 tablespoon sunflower seeds
- Combine all ingredients in a salad bowl and toss.
- Add dressing and toss lightly just prior to serving.
